Weight Watchers Crock Pot Recipes - Beef Adobado
You cant really figure how this recipe is going to taste when you first hear about it and that's exactlt what happened to me. I was over at one of my friends place and she is an amazing chef, we were invited for dinner and she told me that one of the dishes were Beef Adobado.
I had not really heard of this slow cooker recipe before but, I was really excited to try it out and boy it was so good I had to get the recipe and try it out at home. If is a really wonderful slow cooker dish and I am pretty sure you will like it.
Cooking Time : 5-6 Hours
Serving: 8
Serving Size 6 ounces.
Ingredient For the Weight Watchers Crock Pot Recipes - Beef Adobado
Beef Roast: 3 Pound Well Roasted With No Fat
New Mexico Chillies: 3 Ounces
Cloves: 6 Garlic
Onions: 1 Chopped in quarters
Chipotles in Adobado: 2
Cumin: 1tsp
Coriander: 1tbs
Dried Oregano: 1tsp
Salt and Pepper: To Taste
Bay Leaves: 2 Leaves
Cilantro: 1/4 Cup To Garnish.

1. First saute the new Mexico chilli till it puffs up and you get the the fragrance this will take about 3-5 minutes, roasting the chillies like this really brings out the flavor then remove the stalk of the chilli and de seed it.
2. After this add the chillies to a pot of water bring to boil and let it simmer for 5 minutes. Then turn the heat off and let it rest for 30 minutes.
3. Now add the Chilli Peppers and one cup of the liquid, then add the chipotles, coriander, cumin, oregano, garlic, and onion in a blender and blend until its combined well this creates your adobo sauce.
4. Cut the roast beef into small cubes and season with pepper and some salt, theb throw a small amount of adobo sauce at the bottom of the crock pot and then place the beef on top of it after that you place the remaining sauce on top of the beef.
5. Now cook it in the crock pot for 6-8 hours until the beef is tender, you can serve this with rice, tacos or even make a sandwich. Garnish with freshly chopped cilantro
